Brilio.net/en - The Rainbow Bagels at the Bagel Store in the Williamsburg neighbourhood of New York City look like a snack that could easily be found in the magical and colourful tales of Alice in Wonderland or the Wizard of Oz.


The owner of the store, Scott Rossillo, has been painstakingly making the bagels for two decades, and has perfected the art of dyeing, layering and twisting the colourful layers of dough into the rainbow bagels they eventually become.

Its an absolute labour of passion and art, said Rossillo of his creations. Rossillo may just be the modern day Willy Wonka.

The dough is given a splash of neon colour and is then shaped into mounds. The different coloured mounds are then flattened and layered into a large colourful mound, and are then sliced and rolled into the bagels that they will eventually become. It takes about 5 hours to make 100 of the Rainbow bagels, which is the same time it takes to create 5,000 regular bagels. Its also the reason that they are the bagels to sell out the quickest, especially on weekend brunch dates. Of the 30 bagels offered at the shop, its no wonder that the Rainbow is the number one selling bagel, according to Rossillo.

The bagels have a blueberry fruity taste to them, according to the owner. When topped off with the funfetti cream-cheese shmear, the bagels taste more or less like a cake. Its the best dessert breakfast that anyone could ask for.

And it looks good on your Instagram feed too. Social media is one of the reasons that Rossillo believes his store had a recent surge in popularity, despite having been opened for two decades. That, an the ruling on gay marriage and several celebrity shout-outs have truly catapulted the small company into a huge success.

So if youre making a trip to New York City and want a colourful way to add some carbs to your travel list, look no further than the Bagel Store. That is, if you dont mind waiting at the queue that can easily make its way out the door.
